A Brief History of the Carolina-Style Burger

The Carolina-style burger traces its roots to the early–mid 20th century in North and South Carolina, where small-town diners and roadside grills shaped a bold, no-nonsense approach to food. Influenced by the region’s deep barbecue traditions, cooks began topping simple griddled beef patties with chili, coleslaw, mustard, and onions—ingredients already familiar at cookouts and BBQ joints.


Chili added warmth and heartiness, slaw brought crunch and tang, mustard cut through the richness, and onions delivered a sharp bite. Together, they reflected the Carolina palate: savory, tangy, and layered with texture.
